This edition covers food additives. Pesticide residues, veterinary drug residues and contaminant limits sit in separate legal systems and will be compared separately.
A regulatory amount for a specific additive and food category, often expressed in mg/kg or mg/L.
A body-weight-based lifetime daily intake reference used in risk assessment; it is not a formulation limit for one product.
Usually means no fixed numerical ceiling, while use remains limited to the minimum needed for the intended technical effect and all entry conditions.
Based on national food safety standards including GB 2760—2024, with controls tied to the additive and food category.
Preservatives, antioxidants, sweeteners, colouring matter and other classes are governed through separate regulations and schedules.
Uses a positive-list system specifying additive identity, specifications, permitted scope and limits.
Uses an EU positive list; Annex II sets out authorised additives, food categories and conditions of use.
Rules differ across the Americas; this comparison uses U.S. federal rules as an example. A food additive use must be authorised, or its intended use must have a GRAS basis.
Two numbers alone are not comparable. Align the additive or contaminant, food category, unit, food state, rule version and footnotes. ADI comparisons also require body weight and total intake from all foods.

Regulation draws the line, dose measures the distance, cases reveal the scene. Every additive group is unpacked along those three axes — every judgement ships with a clickable source.
16 groups · 26 sourced casesWhat may be used, in which foods, up to how much — GB 2760 and national standards draw exactly that line. 'Over-limit' and 'out-of-scope' in enforcement notices both mean crossing it.
An ADI is a lifetime daily reference, not a safe/unsafe switch; acute and lethal figures come from accident literature. Converted against compliant food, most exposures sit orders of magnitude away — but not infinitely.
Real incidents keep starring the same cast: nitrite mistaken for salt, catering violations, banned substances used on the sly. Read enough cases and the thing to guard against is never the ingredient name itself.
Read together: the line regulation draws has to be converted into distance by dose — and the cases keep proving that crossing it happens in only a few ways.Focus on oxygen transport in blood
Nitrites oxidise haemoglobin into methaemoglobin, which cannot carry oxygen: acute poisoning shows as blue lips, headache and vomiting, and in severe cases hypoxia, convulsions and coma. Infants, whose enzyme systems are immature, can fall ill at far lower doses (the historic blue-baby syndrome). Nitrite itself is not carcinogenic, but in stomach acid it can react with amines to form nitrosamines — the reason regulators control it so tightly. The specific antidote is methylene blue.
The ADI is a lifetime daily reference, not a personal safety guarantee. Acute and lethal doses come from accident reports and emergency-medicine literature — almost all cases involve mistaking nitrite for table salt or illegal use in catering. Compliant cured meats carry residues measured in mg/kg; a normal serving delivers milligrams, one to two orders of magnitude below gram-level incident doses.
Knowing nitrite was banned in catering, Hou added it to pork ribs supplied to a primary school; 56 students were hospitalised with nitrite poisoning. The court convicted him of producing and selling food not meeting safety standards.
Supreme People's Court (campus food safety model cases, released 11 September 2025)A catering operator was criminally convicted for illegal nitrite use; the same notice notes 0.3–0.5 g causes poisoning and about 3 g can kill.
